Preheat your oven to 350°F (175°C).
Place the Brie wheel on a baking sheet lined with parchment paper, or in a Brie baker if you have one.
With a small knife, make tiny slits on top of the Brie. Tuck the garlic slices into the slits so they spread across the cheese.
Drizzle the honey over the top, letting it seep into the slits and around the edges.
Pour the olive oil over the Brie to boost flavor and help it bake nicely.
(Optional) Add a few sprigs of rosemary on top for extra aroma.
Bake for 15–20 minutes, until the Brie feels soft and gooey in the center. Watch closely so it doesn’t melt completely.
Remove from the oven and let it cool just a little before serving.
Serve warm with sliced baguette or crackers. Scoop up that creamy cheese with hints of garlic, honey, and herbs.
