Beef Rice Bowl

Ingredients
  

Rice

  • 1 ½ cups long-grain white rice washed and soaked for 30 minutes
  • 3 cups water
  • 2 chicken bouillon cubes
  • ½ teaspoon turmeric powder

White Sauce

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Beef

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • ½ yellow onion finely chopped
  • 2 cloves garlic minced
  • 2 teaspoons shawarma spice blend
  • Salt and pepper to taste

Toppings

  • Cherry tomatoes halved or quartered
  • Cucumber diced
  • Parsley finely chopped

Instructions
 

Make the Rice

  • Wash the rice in cold water until it runs clear. This helps the rice cook up fluffy instead of sticky.
  • Soak the washed rice for 30 minutes to help each grain cook perfectly.
  • Drain the rice and transfer it into a small pot.
  • Add 3 cups water, bouillon cubes, and turmeric.
  • Bring everything to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and gently simmer for about 15 minutes, or until the water is absorbed.
  • Remove from heat and fluff with a fork. Set aside while you prepare the rest.

Prepare the Sauce

  • In a small bowl, combine: Greek yogurt, mayonnaise, minced garlic, lemon juice, salt and pepper.
  • Give it a stir until everything is well combined.
  • Refrigerate the sauce until you’re ready to build your bowls.
    The chilling time helps the flavors come together, and somehow it tastes even better drizzled cold over warm beef and rice.

Cook the Beef

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the chopped onion and sauté until soft and translucent.
  • Add the garlic and cook for another 30 seconds until fragrant.
  • Add the ground beef, breaking it up with a spoon as it cooks.
  • Cook until the beef is browned and cooked through.
  • Add the shawarma spice blend along with salt and pepper.
  • Let everything cook for a few more minutes so the flavors can fully combine.
  • Remove from heat and set aside.
    The spices should coat the beef beautifully, giving you that iconic halal-cart flavor without any fuss.

Assemble Your Bowls

  • Start with a generous scoop of the turmeric rice.
  • Add a spoonful (or two!) of the seasoned beef on top.
  • Scatter the tomatoes and cucumbers over the bowl.
  • Drizzle the chilled white sauce on top.
  • Finish with a sprinkle of fresh parsley.
