In a small bowl or right in the bottom of your glass (if it’s sturdy), muddle the blueberries and mint leaves together. You can use the back of a spoon or a muddler. You want to crush the berries just enough so they release their gorgeous color and flavor, but not turn them into total mush.
Squeeze in the juice of one lime. If you like things extra tangy, go ahead and add a little more. Then stir in the 2 tablespoons of honey. Give it a good mix so the honey dissolves, it blends easier if your lime juice is at room temp.
Fill your glass with ice cubes. You can go heavy on the ice because it helps keep things cool and gives you that lovely chilled look.
Now pour your sparkling water right over the top. Watch those bubbles dance! Give everything a gentle stir so it all comes together.
