Preheat your oven to 350°F. Spread the hazelnuts out on a baking sheet and roast them for 10 minutes. This step brings out their natural sweetness and makes them extra crunchy. Once roasted, let them cool for about 5 minutes.
Hazelnuts have thin, papery skins that can be a little bitter. The good news? They come off easily! Just wrap the cooled hazelnuts in a clean kitchen towel and shake them around. Most of the skins will rub right off. It doesn’t have to be perfect, any leftover bits of skin won’t hurt a thing!
Place the chocolate morsels in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted. Be careful not to overheat it, chocolate can burn easily!
Line a baking sheet with parchment paper and pour the melted chocolate onto it. Use a spatula to spread it out into an even layer. Then, sprinkle the roasted hazelnuts evenly over the chocolate.
Pop the baking sheet into the fridge and let it set for at least 30 minutes. Once the chocolate is firm, break it into pieces. No need for perfect squares, rustic, uneven pieces add to the charm!
Now comes the best part, snacking! Serve it on a platter, package it up as a gift, or keep a stash in the fridge for whenever a chocolate craving hits.
