Christmas M & M Cookies

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 1/2 cups Christmas M&M’s
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper or a silicone baking mat, this keeps your cookies from sticking and makes cleanup a breeze.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside. This step ensures the dry ingredients are evenly distributed before adding them to the wet ingredients.
  • In a large mixing bowl, beat together the butter, granulated sugar, and brown sugar. Use an electric mixer on medium speed and beat for 2-3 minutes until the mixture is light and fluffy. This step is key to making soft and chewy cookies!
  • Add the vanilla extract and eggs, one at a time, beating well after each addition. This helps the eggs fully incorporate into the dough for a smooth consistency.
  • Gradually add the dry ingredient mixture to the wet ingredients. Mix just until combined, overmixing can make your cookies tough instead of soft.
  • Gently fold in the Christmas M&M’s and Semi-sweet chocolate chips. If you have little ones helping, let them do this part. Just be prepared for a few M&M’s to go missing in the process.
  • Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto your prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, until the edges are lightly golden but the centers are still soft. The cookies will continue to set as they cool.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
