Prep your garlic. Grate it finely so it melts right into the sauce.
Mix it all together. In your slow cooker, add the chicken, soy sauce, honey, hoisin sauce, garlic, rice vinegar, sesame oil, and a pinch of salt and pepper. Stir everything together until the chicken is coated.
Slow cook. Cook on high for 3–4 hours or low for 6–7 hours. Flip the chicken halfway through for even cooking.
Shred the chicken. Once cooked, shred it right in the pot. A hand mixer makes this super quick and easy!
Serve and enjoy. Spoon the chicken over fluffy white rice (or brown rice, quinoa, or noodles), then sprinkle with scallions and sesame seeds for a fresh finish.
