Cucumber Rolls with Smoked Salmon

Ingredients
  

  • 1 English cucumber Choose a firm fresh cucumber for easy slicing.
  • 4 ounces cream cheese, softened Softened cream cheese spreads like a dream and makes assembly a breeze.
  • 1 tablespoon fresh dill, chopped - optional Adds a lovely freshness (highly recommended!).
  • Everything bagel seasoning The magical blend that brings it all together.
  • 4 ounces smoked salmon, thinly sliced The star of the show, adding a rich, salty depth of flavor.

Instructions
 

  • Prep Your Cucumber. Start by slicing the cucumber lengthwise into thin strips. A mandoline slicer is your best friend here, but a good vegetable peeler works too. You want the slices to be thin enough to roll but thick enough to hold their shape. Lay them out on a paper towel and pat them dry to remove excess moisture. This keeps your rolls from getting watery.
  • Spread the Cream Cheese. Once your cucumber slices are ready, it’s time to add that creamy, tangy layer of goodness. Spread the softened cream cheese evenly over each cucumber slice. If you want to kick up the flavor, mix the chopped fresh dill into the cream cheese before spreading.
  • Sprinkle Everything Bagel Seasoning. Generously sprinkle everything bagel seasoning over the cream cheese layer. This seasoning is the secret ingredient that makes these rolls irresistible. If you don’t have it on hand, you can make your own by mixing sesame seeds, poppy seeds, dried garlic, dried onion, and a pinch of salt.
  • Add the Smoked Salmon. Place thin slices of smoked salmon on top of the cream cheese layer. Try to cover most of the surface but don’t overload it, you still need to be able to roll everything up neatly!
  • Roll and Slice. This is the fun part! Carefully roll up each cucumber strip, pressing gently to keep everything intact. Once rolled, place the rolls seam-side down on a plate and refrigerate for at least 30 minutes to help them hold their shape and allow the flavors to meld.
  • Slice and Serve. Before serving, use a sharp knife to slice each roll into bite-sized pieces. Arrange them on a platter, and get ready for the compliments to roll in!
