Galaxy Cupcakes

Ingredients
  

For the Cupcakes

  • 1 15.25-ounce box lemon cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 3-ounce box lemon pudding mix
  • Purple pink, blue, and black food coloring gel
  • Cupcake liners
  • 1 large mixing bowl and 4 small bowls

For the Frosting

  • 1 1/2 sticks salted butter softened
  • 3 –4 cups powdered sugar
  • 3 tablespoons Hostess Twinkies Coffee Creamer
  • 1 large piping bag
  • 1 large star frosting tip
  • Galaxy sprinkles

Instructions
 

For the Cupcakes

  • Preheat oven to 350 degrees. Spray or line a standard muffin tin.
  • Add cake mix and pudding to a large mixing bowl. Using a hand or stand mixer, mix in your water, oil, and eggs on medium until well incorporated.
  • Separate the batter evenly between the 4-mixing bowls. Add the pink food coloring to one, the blue to the another, the purple to the 3rd and the black to the 4th.
  • Alternate adding the colored batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before adding the frosting.

For the Frosting

  • In a large mixing bowl, using a hand or stand mixer, cream the butter for 2 minutes, until light and fluffy
  • Slowly mix in the powdered sugar, 1 cup at a time, while alternating 1 tablespoon of the coffee creamer. Continue to mix until creamy and stiff peaks form.
  • Add the frosting to the prepared piping bag.
  • Frost your cupcakes and garnish with the galaxy sprinkles if desired and enjoy!
