Halloween Marshmallow Pops

Ingredients
  

  • 10-12 oz white chocolate
  • Coconut oil this helps the chocolate melt smooth and silky
  • Green orange, and purple oil-based food coloring (important: water-based will mess with the chocolate!)
  • Chocolate buttercream frosting
  • White buttercream frosting
  • 20-25 marshmallows standard size
  • Candy corn
  • 1 cup chocolate chips
  • Paper straws you could also use cake pop sticks in a pinch
  • Decorator sugar eyes optional but SO cute!

Instructions
 

  • Cut your straws in half. (Trust me, the shorter size is just easier for little hands to manage.) Stick a marshmallow onto the cut end of each straw. Set them aside on a tray or a big plate. This is a great job for little helpers if you have kids begging to be part of the action!
  • Melt about 2 oz of white chocolate at a time with ¼ teaspoon coconut oil. Heat gently (microwave works great 15-second bursts, stirring in between) until smooth and creamy.
  • If you want colored marshmallow pops, now’s the time to add a drop or two of oil-based food coloring and stir it all together.
    Kitchen wisdom: Small batches make it easier to work quickly without the chocolate hardening up on you. Plus, you can make multiple colors without any stress!
  • Dip each marshmallow into the melted chocolate, letting the excess drip off. Place them carefully onto a wax-paper-lined tray.
  • Once all your marshmallows are dipped, pop the tray into the fridge or freezer for a few minutes until they set nice and firm.
    Tiny victory moment: Even if the coating isn’t perfectly smooth, it’ll look adorable once decorated. Imperfect = homemade = made with love
  • Now the real creativity begins. This is when the kids (and let’s be honest, the adults too) get super into it. Here’s how to make each spooky character:
  • 👻 Ghost: Dip the marshmallow in plain white chocolate and let it set. Use chocolate buttercream to pipe on simple eyes and a round spooky mouth.
  • 🧟 Mummy: Dip in white chocolate and set. Put the leftover melted white chocolate into a small zip-top bag, snip a tiny hole in the corner, and drizzle it back and forth to make the mummy “bandages.” Add decorator sugar eyes while the drizzle is still wet or pipe little white blobs and dot them with chocolate for homemade eyes.
  • 💚 Frankenstein: Color your white chocolate green and dip the marshmallow. Once set, pipe chocolate buttercream hair across the top, add stitches on the sides, and draw a little squiggly mouth.
  • 🎃 Jack-O’-Lantern: Color white chocolate orange and dip the marshmallow. After it’s set, pipe on triangle eyes and a jagged mouth with chocolate buttercream. Extra cute if you add a little green squiggle on top for the “stem”!
  • 🧛‍♂️ Dracula: Color white chocolate purple and dip the marshmallow. Once it’s set, use chocolate frosting to pipe slicked-back hair. Add white frosting fangs (two little triangles under the mouth), and dot on eyes.
  • Here’s the final flourish that makes them pop (pun intended): Melt your chocolate chips with ¼ teaspoon coconut oil until smooth. Dip the bottom of each decorated marshmallow pop into the melted chocolate.
  • Place it on a piece of candy corn (with the pointy end of the candy corn facing down). Add another candy corn upside down onto the front of the pop like a little nose (optional but SO festive).
  • If you didn’t use sugar eyes earlier, you can pipe on eyes now with frosting.
  • Let them set up in the fridge for a few minutes, and that’s it you’re done!!
