Ice Cream Sandwiches

Ingredients
  

  • Vanilla ice cream use the good stuff if you can it makes a difference!
  • Mini rainbow candy-coated chocolate chips the more colorful, the better
  • Chocolate chip cookies store-bought or homemade no judgment here

Instructions
 

  • Take your vanilla ice cream out of the freezer and let it sit on the counter for a few minutes. Not too long just until it’s soft enough to scoop easily. If it’s too hard, you’ll end up smashing your cookies. If it’s too soft, it’ll melt faster than your patience after a long school pickup line.
  • Pour your mini rainbow candy-coated chocolate chips into a shallow dish. I like to use a pie plate or a little rimmed tray so there’s room to roll the sandwiches without spilling candy everywhere (though my dog doesn’t seem to mind the mess).
  • Plop a scoop of that softened vanilla ice cream onto the flat side of one cookie. Use the back of your spoon or scoop to gently spread it a little, making sure it gets close to the edge.
  • Take a second cookie and press it on top of the ice cream. Press gently until the ice cream starts to peek out the sides this is where the magic happens.
  • Roll the edge of your ice cream sandwich in the dish of mini rainbow chips. The ice cream will grab the candy, and suddenly, you have a treat that looks like it came straight from a retro dessert shop.
  • Place your beautiful little sandwiches on a tray or plate and pop them in the freezer for at least one hour longer if you want them to really firm up. Then, either serve them immediately or wrap each one in plastic wrap or foil and store them in a freezer-safe container. Boom. Dessert for days.
