Preheat the oven to 200°C (400°F).
Prep the Brussels sprouts. If they’re on the bigger side, slice them in half. If they’re smaller, keep them whole.
Wrap with bacon. Take one slice of bacon and wrap it snugly around each sprout. Use a toothpick to hold it in place.
Line the tray. Place each wrapped sprout seam-side down on a parchment-lined baking sheet (this helps keep cleanup easy).
Maple drizzle. Brush or drizzle the sprouts with maple syrup, then season with salt and pepper.
Bake. Pop them in the oven for 20–25 minutes, flipping halfway through so they get evenly crispy.
Serve hot. Remove toothpicks if you like, and enjoy right away!
