No Bake Oreo Cheesecake

Ingredients
  

For the Crust:

  • 2 cups Oreo cookie crumbs from about 24 cookies – just toss the whole cookie in, cream and all.
  • 6 tbsp unsalted butter, melted this helps hold the crust together.

For the Filling:

  • 14 oz cream cheese, softened let it sit at room temp so it blends easily.
  • 1 cup heavy cream, 33% fat this gives your filling that light, mousse-y texture.
  • 1 cup powdered sugar for that perfect touch of sweetness.
  • 1 tsp vanilla extract just enough to enhance the flavor.
  • 12 Oreo cookies crushed – mix these into the filling for cookie goodness in every bite.

For the Topping:

  • 3 whole Oreo cookies for decorating.
  • 3-4 tbsp crushed Oreo cookies sprinkle these like magic cookie confetti.

Instructions
 

Make the Crust

  • Grab a food processor if you’ve got one, or toss your Oreos into a sealed zip-top bag and give them a good bash with a rolling pin. Kids love helping with this step just keep the bag sealed tight unless you want a kitchen snowstorm of crumbs.
  • Mix your Oreo crumbs with the melted butter in a bowl until it resembles wet sand.
  • Press the mixture into the bottom of a 7–8 inch springform pan. Use the back of a spoon or your hands to get it nice and even.
  • Pop that beauty in the fridge for about 20 minutes to set.
    Pro tip: If you don’t have a springform pan, you can use a pie dish or square baking dish it just might be a little trickier to slice cleanly, but it’ll still taste amazing.

Make the Filling

  • In one bowl, whip the heavy cream until soft peaks form. You want it light and fluffy, but don’t overdo it or you’ll head into butter territory.
  • In another bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy. No lumps!
  • Gently fold the whipped cream into the cream cheese mixture. This step is like tucking in a baby be gentle. You want to keep all that airy goodness.
  • Fold in your crushed Oreos. You can make these chunky or fine dealer’s choice.
  • Spread this dreamy mixture over your chilled crust and smooth out the top with a spatula.

Chill It.

  • Give it at least 4–6 hours to chill, or better yet, let it sit overnight. It needs that time to set up properly so it slices like a dream.

Decorate (aka, Make It Look Fancy With Minimal Effort)

  • Sprinkle crushed Oreos over the top like you’re dusting it with love.
  • Add a few whole Oreos standing tall, tilted, or even crumbled artistically (read: however your kids place them works just fine).
  • Then slice and serve! This cheesecake is best served chilled, straight from the fridge. Each slice is rich, creamy, and packed with Oreo goodness.
