Pineapple Coconut Popsicles

Ingredients
  

  • 1 fresh ripe pineapple – peeled cored, and chopped
  • 1 can coconut milk – full-fat is best
  • 1 lime juiced
  • ¼ cup honey or to taste

Instructions
 

  • Add your chopped pineapple, coconut milk, lime juice, and honey to a blender. Blend until smooth and creamy, no chunks, no worries. Just pure tropical goodness.
  • Grab your popsicle molds (or use small paper cups with wooden sticks if you’re in a pinch). Pour the mixture evenly into each mold, leaving just a little space at the top for expansion.
  • Pop the molds into the freezer and let them set for at least 4–6 hours, or overnight if you’re planning ahead.
  • To release the popsicles, run the molds under warm water for a few seconds. Then just pull and serve.
