Taco Ranch Bites

Ingredients
  

  • 1 lb ground beef (450 g)
  • 2 tbsp taco seasoning
  • 1 tbsp ranch seasoning or dry ranch dressing mix
  • 1/4 cup water
  • 24 mini tortilla scoop chips
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 small tomato, diced
  • 2 tbsp chopped fresh cilantro

Optional toppings:

  • Sour cream
  • Guacamole
  • Salsa

Instructions
 

  • Grab a skillet, warm it over medium heat, and brown your ground beef until fully cooked. Drain off any extra fat so things don’t get greasy.
  • Sprinkle in the taco seasoning, ranch seasoning, and water. Mix everything around so the beef gets nicely coated, then let it simmer for 2–3 minutes. It’ll thicken up quickly and smell amazing.
  • Preheat the oven to 350°F (175°C).
  • Lay out your tortilla scoop chips on a baking tray—like little edible cups waiting for you.
  • Fill each one with a spoonful of your seasoned beef, a sprinkle of diced tomatoes, and a generous pinch of cheese.
  • Pop the tray into the oven for 5–7 minutes, just long enough for the cheese to melt into bubbly goodness.
  • Sprinkle with cilantro. Serve warm with sour cream, salsa, or guacamole. People will flock to them like you just opened a snack buffet.
