Watermelon Feta Salad

Ingredients
  

  • 3 cups watermelon, cubed – Make sure it’s cold! That juicy crunch is even better when it’s chilled.
  • 2 tablespoons feta cheese, crumbled – Go with the block kind if you can it’s creamier and you can control the size of the crumble.
  • 2 tablespoons balsamic glaze – You can find this bottled near the vinegars or make your own by reducing balsamic vinegar until it thickens.
  • Fresh mint leaves, chopped (to taste) – A little goes a long way, but don’t skip it! It makes the whole salad feel fresh and bright.

Instructions
 

  • Start by cutting the watermelon into bite-sized cubes. If you’ve got a seedless one, great! Less hassle. Toss the cubes into a big bowl preferably one pretty enough to serve from, because we’re not dirtying extra dishes today.
  • Sprinkle the crumbled feta over the watermelon. Try not to clump it in one spot give everyone a good balance of sweet and salty in every bite.
  • Drizzle that balsamic glaze over the whole thing. If you’ve never had this combo before, get ready for your tastebuds to do a little happy dance.
  • Finely chop your mint leaves and toss them on top. You can use kitchen scissors for this if you’re feeling lazy (no judgment been there).
  • Use a big spoon or your hands (clean ones!) to gently toss everything together. Serve it right away, while everything is cool and crisp.
