Why You’ll Love These Popsicles

  • They’re ridiculously easy. Like, mix-pour-freeze easy. You don’t need to be a Pinterest mom or a culinary wizard to pull these off.
  • They’re customizable. Want a different fruit? Go for it. Don’t have coconut milk? Sub in yogurt or cream. No judgment here just use what you’ve got.
  • They’re perfect for parties. Bright, colorful, and fun, they look like you put way more effort into them than you actually did.
  • They make memories. Let the kids help! Layering, pouring, and peeking in the freezer to see if they’re frozen yet it all becomes part of the fun.

Here’s everything you need to make 10–12 popsicles.

Step-by-Step Instructions

Okay, let’s break this down. You’re going to be making these in layers, so there’s some freeze time between each step but the hands-on part is quick and easy.

Step 1: Make the Red Layer

  1. Blend it up – Toss the strawberries, water, and sugar into a blender. Blend until smooth.
  2. Taste test – If it’s not sweet enough for your liking, add another spoonful of sugar and blend again.
  3. Pour & freeze – Fill each popsicle mold about 1/3 full. Pop them in the freezer for at least 3 hours or until solid.

Pro tip: If you’re using frozen strawberries, let them sit out for a few minutes so they’re easier to blend. Or just lean into that smoothie life and let your blender do its thing.

Step 2: Make the White Layer

  1. Mix it all together – Combine the coconut milk, sugar, and lemon juice in a bowl or even a large measuring cup.
  2. Optional hack – Pour the mix into an empty water bottle using a funnel this makes it way easier to fill those molds without spilling all over your counter.
  3. Add the next layer – Once the red layer is fully frozen, carefully pour the white layer on top until the molds are 2/3 full. Freeze for another 3 hours.

Life tip: Don’t rush the freeze time. If you pour the white layer before the red is set, your cute stripes will end up more like a tie-dye experiment… which hey, could be fun too.

Step 3: Make the Blue Layer

  1. Stir it up – In a bowl or measuring cup, stir together the warm water, sugar, raspberry extract, and food coloring. Make sure the sugar dissolves completely.
  2. Pour & freeze – Fill the remaining third of the mold with the blue mixture.
  3. Final freeze – This one needs a solid 6 hours to set completely. Overnight is even better if you’ve got the patience (or can hide them from curious little hands!).

Removing and Serving

When you’re ready to serve, run the molds under warm water for a few seconds, and they should slide right out like a dream.

Tips, Tricks, and Swaps

  • No raspberry extract? You can use blueberry or even a splash of vanilla for a different twist. It’s all about the vibe, not perfection.
  • No coconut milk? Yogurt works great, or even vanilla pudding if you want something creamier.
  • Want smoother layers? Use a spoon to gently pour each layer against the inside of the mold this helps keep the colors from mixing.

Storage & Leftovers

These popsicles keep great in the freezer for about a week maybe longer, but ours never make it past day three. You can store them right in the mold, or pop them out and wrap individually in parchment or plastic wrap if you’re prepping for a party.

So there you have it Red, White, and Blue Popsicles that are as festive as they are fun. I hope these little frozen treats bring you and your family some sweet, colorful joy this summer.
