Monster Eye Cupcakes

Ingredients
  

For the Cupcake

  • 1 white cake mix
  • 1 ¼ cups water
  • 1/3 cup pure canola or coconut oil
  • 4 large egg whites
  • ½ 3- or 6-ounce box of lime jello, divided*
  • Cupcake liners

For the Frosting

  • 2 cups salted butter softened
  • 3 tablespoons vanilla coffee creamer
  • ½ 3- or 6-ounce box of orange jello, divided
  • 4 cups powdered sugar
  • Orange food coloring
  • 1 large piping bag
  • 1 large round frosting tip
  • Candy sugar eye decorations

Instructions
 

For the Cupcake

  • Preheat the oven to 350°F. Line a standard muffin tin with cupcake liners or spray with non-stick spray.
  • In a large bowl, mix together the cake mix, water, oil, and egg whites until smooth.
  • Split the batter evenly between two bowls. In one bowl, mix in the lime jello powder. Leave the other bowl as is for a fun contrast of color.
  • Layer the green and white batters into your cupcake liners, go green first, then white, then green again until each cup is about 2/3 full.
  • Bake for 18–20 minutes or until a toothpick comes out clean. Let them cool completely before frosting.

For the Frosting

  • Whip the butter until it’s light and fluffy.
    Tip: Softened butter is key here, not melted.
  • Add powdered sugar, one cup at a time. In between, drizzle in the vanilla coffee creamer to keep it smooth and creamy.
  • Drop in the orange jello powder and a few drops of orange food coloring. Mix until it’s just the right pumpkin-y shade.
  • Scoop the frosting into your piping bag and swirl big beautiful mounds on each cupcake.
  • Add candy eyes wherever your spooky heart desires, one, two, three, or go full on!
