Why We Love These Halloween Cupcakes

You can totally make them ahead of time, and they’re super easy to transport if you’re taking them to school or a friend’s house.

For the Cupcake:

  • 1 white cake mix
  • 1 ¼ cups water
  • 1/3 cup pure canola or coconut oil
  • 4 large egg whites
  • ½ (3- or 6-ounce) box of lime jello, divided*
  • Cupcake liners

For the Frosting:

  • 2 cups salted butter, softened
  • 3 tablespoons vanilla coffee creamer
  • ½ (3- or 6-ounce) box of orange jello, divided
  • 4 cups powdered sugar
  • Orange food coloring (gel gives a brighter pop!)
  • 1 large piping bag
  • 1 large round frosting tip
  • Candy sugar eye decorations

Instructions

For the Cupcakes:

1. Preheat the oven to 350°F. Line a standard muffin tin with cupcake liners or spray with non-stick spray.

2. Mix up your batter: In a large bowl, mix together the cake mix, water, oil, and egg whites until smooth.

3. Divide and color: Split the batter evenly between two bowls. In one bowl, mix in the lime jello powder. Leave the other bowl as is for a fun contrast of color.

4. Scoop and swirl: Layer the green and white batters into your cupcake liners, go green first, then white, then green again until each cup is about 2/3 full. This gives a fun monster swirl when you bite into them!

5. Bake it up: Bake for 18–20 minutes or until a toothpick comes out clean. Let them cool completely before frosting.

For the Frosting:

1. Whip the butter until it’s light and fluffy. (Tip: Softened butter is key here, not melted!)

2. Add powdered sugar, one cup at a time. In between, drizzle in the vanilla coffee creamer to keep it smooth and creamy.

3. Add orange flair: Drop in the orange jello powder and a few drops of orange food coloring. Mix until it’s just the right pumpkin-y shade.

4. Pipe it on: Scoop the frosting into your piping bag and swirl big beautiful mounds on each cupcake.

5. Monster-ify them! Add candy eyes wherever your spooky heart desires, one, two, three, or go full on!

Tips & Tricks

Color

Want to get really wild? Make different colored cupcakes! Use purple or black food coloring in one half of the batter instead of white, or make the frosting neon green instead of orange. You could even let each child pick their own frosting color if you’re doing this as a party activity.

Flavor

If you don’t have orange jello or lime jello handy, you can totally swap it out. Lemon, strawberry, or even blue raspberry all make super fun alternatives. The goal is fun, not perfection!

Make Ahead
