Banana Pudding Cookies

Okay I have to share this one with you. If you’re looking for a sweet treat that’s easy, fun, and gets people saying “Ooooh, what are these?!”, these Banana Pudding Cookies are it.

These cookies are soft, chewy, and loaded with banana flavor and melty white chocolate chips. Honestly, they taste so good, plus they come together super fast, which is exactly what we all need.

Banana Pudding Cookies Recipe

  • 1 package of banana pudding jello mix (yep, the secret weapon)
  • 1 ripe banana, mashed (the spottier the better!)
  • 1 cup brown sugar
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup white chocolate chips (feel free to add a smidge more, I won’t tell)
  • 2 cups flour
  • 1/2 cup butter, softened

How to Make Banana Pudding Cookies

Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, or if you’re like me and out of parchment again, a little non-stick spray works too.

Step 2: In a big mixing bowl, cream together your butter and brown sugar until it’s light and fluffy. A hand mixer is great, but elbow grease works too.

Step 3: Now toss in your mashed banana, eggs, and vanilla. Mix it up until it looks like banana mushy goodness.

Step 4: In a separate bowl (I know, more dishes, but trust me here), whisk together the flour, banana pudding mix, and baking soda.

Step 5: Add your dry stuff to the wet stuff gradually, unless you like flour confetti all over your kitchen. Mix until everything’s well combined and starting to smell amazing.

Step 6: Fold in those dreamy white chocolate chips. Do a little happy dance, this is the part where it all starts to look like cookie dough!

Step 7: Now, here’s a little tip, put a little vegetable oil on your hands (just a dab) to help with the sticky dough. Roll the dough into little balls, about the size of a ping pong ball, and space them out on your baking sheet. I then like to press a few extra chocolate chips on the top of each cookie.

Step 8: Bake those beauties for 10-12 minutes. You’re looking for golden edges and soft centers. Don’t overbake, soft is the goal here!

Step 9: Let them cool on the pan for a few minutes (if you can wait that long without sneaking one), then move to a wire rack to finish cooling.

Tips:

  • These cookies are always the first to disappear at bake sales and parties. I highly recommend doubling the batch!
  • Want to make them extra cute? Stick a mini wafer on top of each one right when they come out of the oven.
  • Store them in an airtight container… but honestly, they probably won’t last more than 2 days.
